Ingredients:

  • 1 can chickpeas, drained and mashed
  • 2 tbsp vegan mayo
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 celery stalk, chopped
  • Whole grain bread (or gluten-free option)
  • Lettuce and tomato slices for serving
